harvest
Despite the challenging climatic conditions, with a dry summer followed by heavy rains in September and a hot October, the potential alcohol content, natural acidity, and pH of the grapes were successfully balanced, resulting in optimal quality. The harvest is done by hand, in ten-kilo crates, with sorting on a table and gravity flow in the winery, without pumps.

12 months in 225-liter French oak barrels from different forests. Clarified with natural egg whites.
